Every grape is assessed for its quality and character, hand-picked with care and thoughtfully considered for its winemaking potential. Each fruit parcel is kept separate so it can be evaluated to capture the core of its flavour components at precisely the right moment. Each batch of wine is allowed to mature in the finest oak, becoming a wine that can be enjoyed now with family and friends.

Bay of Fires Pinot Gris
Pale straw yellow in colour, this wine has enticing aromas of sweet pear and subtle spice. The lively palate features characters of melon and peach, while a smooth, supple mouthfeel is derived from allowing certain parcels of fruit to undergo wild yeast fermentation before being blended with the controlled ferments. The result is a wine that is full and complex with a crisp, refreshing acidity.
Bay of Fires Sauvignon Blanc
Very pale yellow in colour with a slightly green hue, this wine displays abundant aromas of exotic fruits with delicate hints of flint and fresh herbs. The palate is finely textured, displaying the classic Sauvignon Blanc characters of lychee and passionfruit, and marked by persistent length, texture and fine acid.
Bay of Fires Riesling
Pale yellow in colour with a slight lime green hue, the wine's bouquet displays fragrant aromas of fresh lime coupled with subtle hints of musk. The juicy, vibrant palate shows luscious citrus and a crisp mineral acidity, ensuring drinkability while young, but this elegant wine will also reward patience with extra time in the cellar.
Bay of Fires Chardonnay
Medium straw in colour with a pale green hue, this wine displays intense aromas of spice, fresh white peach and preserved lemon. Toasty oak with a hint of lemon curd richness also features in the wine when young. Flavours of stonefruit and grapefruit interplay with creamy toast characters on the palate, adding complexity. The wine is integrated and seamless, with a crisp acid finish, which adds a pleasant juiciness to the wine.
Bay of Fires Pinot Noir
Brilliant purple in colour, this wine displays sweet, ripe strawberry aromas, coupled with complex Chinese five spice and cinnamon nuances. The palate is elegant and supple, with remarkable power, intensity and length. Framed by ripe, moderate tannin the graceful, sweet strawberry fruit is complemented, yet not dominated, by spice. Overall, the wine has wonderful poise and balance.
